Borsht

Here’s a fun read and profile of Ievgen Klopotenko, something of a Ukrainian Jamie Oliver.

I have fond memories of eating at his restaurant in Kyiv, which was a nice walk up Andriivsky descent from my apartment.

The most interesting thing to order was a surprise set of a few unusual dishes made with Ukrainian ingredients. Then the waiter would give you clues as you tried to guess what each course was.

I really enjoy Klopotenko’s lenten borscht recipe (as an aside, it’s spelled borshch in Ukrainian, hence the multiple spellings), time to figure out if I can get all the ingredients in Amsterdam.
